Thai Black Rice Pudding
Also known as sticky rice pudding, this Thai dessert is a classic. Bring the restaurant to your kitchen by making this easy, yet beautiful recipe at home—the resulting purple color of the dish is stunning.
Ingredients:
2 cups black rice, soaked overnight, drained
1 (15-ounce) can coconut milk
½ cup sugar
¼ finely chopped crystallized ginger
¼ teaspoon salt
¼ cup unsweetened shredded coconut, for serving
4 sprigs fresh mint, for serving
Directions:
1) Combine rice, milk, sugar, ginger, and salt in a medium saucepan; bring to a boil over high heat. Reduce to a simmer and cook, partially covered, until rice is very soft and liquid is mostly absorbed, 30 to 40 minutes.
2) Remove from heat, fluff with a fork, and cover 5 minutes. To serve, scoop into serving bowls and top with shredded coconut and a sprig of mint.
